Mango Allam Chilli Pickle / Mango Ginger Pickle just the name itself is enough to make your mouth water! The process of making this pickle is as delightful as its taste. After harvesting the green chillies, a few are left to ripen and turn vibrant red. Once fully ripe, these red chillies are washed and ground into a paste along with garlic, mustard seeds, cumin seeds, tamarind, turmeric, curry leaves, oil, fenugreek seeds, and salt. This flavorful paste is then stored in a glass or porcelain jar for two to three weeks, allowing the pickle to mature and develop its rich, spicy taste.
