Kesari Burfi, also known simply as Kesari, is a popular and delightful Indian sweet that originates from the southern region of India. This delectable dessert is made primarily from two main ingredients: semolina (sooji) and sugar, with the addition of ghee (clarified butter) and sometimes garnished with chopped nuts like almonds, cashews, or pistachios. The word “kesari” refers to the vibrant saffron color that characterizes this dessert, which is achieved by adding saffron strands or food coloring during preparation.
The process of making Kesari Burfi involves roasting the semolina in ghee until it turns golden and emits a delightful aroma. Next, sugar and water are added to create a sweet syrup that is combined with the roasted semolina. As the mixture thickens, it absorbs the flavors of the ghee, sugar, and saffron, resulting in a rich and aromatic base.
