Pothgaal Sweets Boondhi Laddu

Boondhi Laddu is a traditional Indian sweet delicacy that holds a special place in celebrations, festivals, and auspicious occasions. These delectable spherical treats are made by carefully crafting small, golden-brown, and crispy chickpea flour droplets, which are then bound together with a generous coating of sugary syrup and often adorned with bits of nuts.
The process of making Boondhi Laddu involves several steps, starting with the preparation of a smooth batter using chickpea flour (besan) mixed with water and a pinch of turmeric for a hint of color. The batter is then gently poured through a special ladle with tiny perforations into hot oil, creating tiny droplets that sizzle and fry to a beautiful golden hue. Once they are perfectly crispy, the boondhis are removed and allowed to cool.
The next step involves creating a fragrant and flavorful sugar syrup, often infused with cardamom, saffron, and sometimes rose water or other aromatic elements. The cooled boondhis are then immersed into this warm syrup, allowing them to absorb the sweetness and become slightly soft. Careful mixing ensures that each boondhi is well-coated with the syrup
