Organic Foxtail Millet can be used to prepare lip-smacking dosa.
Mix 1 cup foxtail millet with half cup tur dal, urad dal and half cup chana dal. Soak the mix for 3-4 hours in water. Grind it with 3-4 red chillies, a pinch of hing and some salt if required. The batter should not be too thick or thin. Add 3 tablespoons of grated coconut. Heat a tawa. Check the heat by sprinkling some water on it. Pour a laddle of the batter on the tawa. Spread it in circular motion. Drizzle a tablespoon of oil around the dosa. When cooked, the corners start lifting up. Flip on the other side. Drizzle another half tablespoon of oil and cook well. Serve hot along with chutney.
